I dislike the racks as one end of the bird gets more direct heat than the other end. I will split the bird in two, and work with that method all the time.

Really? My egg kills a chicken on the standing rack. I like the split bird in the oven better.

I did it this past weekend. It IS easy. I did 2 chickens on indirect heat in my pit. Pecan wood in the firebox and coals on the left side. Chicken on the right side. Coated it in olive oil and Cavendar's and jammed those suckers down on open cans of coke. Let it roll for about 3.5 hours. Just awesome smoke flavor and tender as hell.

put a whole fryer on a rack made for fryers. stand it up on the grill and let her cook slow for about 1 1/2 hours. check it with a probe. i do it all the time. easy to do.
