How to cook Jowl meat of an alligator

I have the jowl meat from an 11 foot alligator an trying to figure out the best way to cook it.

Should I treat it like a roast and cook it whole?
Cube it up and make a stew or smother it in a tomato sauce? Or any other ideas. I have only cooked the tail of an alligator.

I’m gonna say this in all seriousness, so don’t think I’m trolling. But, I’d Sous Vide it.

Then cube it and blacken it. Dip it in a combo of Grey Poupon and Mayo 1:1.

Jowl meat is some of the most tender meat on the gator as I've cooked it several ways.
I marinate in a Mango Habanero Sugarcane Molasses recipe and then grill on skewers over a hot pit.


I also use the jowl meat as a substitute for turtle, and make a turtle soup following the Brennan's recipe.
