I love Spanish Mackerel Sashimi or Sushi. So flash freeze it to -32 and keep it frozen overnight. Thaw, Then eat as sashimi.

I usually dont measure, but here are the approximates:

2-3lbs Spanish Mackerel fillets
1 medium onion
1/2 green bell pepper
1/2 red bell pepper
1 cup celery
1 jalapeno
saltine crackers
Tiger Sauce
Slap Ya Mama

Season and sautee vegetables in butter until soft.
Add the seasoned fish and sautee mixture until fish flakes easily.
Stir throughout this process. Do not be afraid
to rough it up.
Add Tiger Sauce to your liking...i usually use about 2-3 tablespoons for this.
Stir in crumbled saltine crackers.

You should have a stuffing like mixture at this point.
Allow to cool and then form into balls slightly larger than a golfball.

Roll in your favorite fry batter. I like a mixture of unseasoned cornflour, white flour and cornmeal. Light on the cornmeal.

drop in 360-365 degree peanut oil.

Its damn good and makes excellent tailgate fare.

Well, I basically followed the recipe that I posted earlier. Added some extra seasoning on top the fish. Peppered the veggies. Tiny piece of butter on top. Came out great. I completely removed the section down the middle of the filet. Did not taste fishy one bit. Y'all should give it a try next time.

Sounds good...but just think about how much better it would have been with some good fish instead of that mackeral.

Put in crab trap, catch crabs, then boil crabs.
