Peeled. I cook a shrimp stew twice a year in a 20 gallon pot. 40/50 works and are nice big shrimp, but I find it’s much better with 50/60 or even 60/70.
40/50 is perfect for at home stews, but for large pots, I like more pieces of shrimp because each person gets more pieces in the bowl and as mentioned, you don’t have to worry about running out as much.

I was planning on peeling them. Then making stock with the shells.

In that case, It really doesn’t matter. Get whatever size, it will work. The smaller, the more pieces people get in their bowl. But the more you have to peel.

I buy 6 5lb blocks of frozen small shrimp 80/100 count and get about 4 or 5 lbs of big whole big shrimp to make my stock. The hell with peeling all them shrimp.

I find most of the time when buying shrimp they only have larger size shrimp. Nothing like 50/60 count, so I cut them in half or 1/3 after pealing them.
The same for when I can cast net some shrimp. The larger shrimp I catch, I will cook them in a skillet with some butter and seasoning to eat as a treat.
