Yes, 1 brisket and 6 chickens, then the rest of the stuff you said you were cooking.
Lots and Lots of Cold Beer will be needed, unless they are Baptists, who don't like to drink in front of other Baptists.
Like someone above said, I would quarter the chickens and cook them flat that way. They will serve easier if you do that.
