How long is too long to marinate meat?

Cut up about 6 lbs of chicken and 5 lbs of beef for a small gathering tomorrow. Special request, fajitas on the griddle. Picked the meat up in worcestershire sauce and seasoning to marinate overnight.
Something came up since then and tomorrow will be out the question for the gathering, but it’s on for Sunday.
Never went longer that 18 hours or so, is 2 nights in the icebox marinating ok for the meat? Or will I be dealing with some trash come Sunday afternoon?

I apologize I don't have a great answer for this, but I think it would depend on how acidic the marinade is.

Had that happen a couple times before and the fajitas turned out fine

Chicken and steak in separate gallon ziplocks, maybe 1 ounce of Lea & Perrins and 1 tsp of lime juice in each with a little chipotle pepper dusted in.

Acidity of the marinade definitely will be the main factor. You may be alright. I promise you'll know pretty quickly if the marinade started "cooking" the chicken and if it did, unfortunately, its gonna be fricked.
If you're in BR and have time, go to Red Stick Spice and get some od their Peruvian Chicken Spice. Make a paste with oil and smear it on then grill. It is such a good seasoning that you don't need more than thirty minutes to get good flavor going. This also assumes you have backup chicken available. Good luck.

Only other chicken I have is thighs for the pit. I’ll keep an eye on the meat I guess.
Might look into the spice place next time I’m in BR, never even heard of it

Definitely worth a stop but be prepared to spend a little. It's not that the place is ridiculous prices, just that they have so much stuff that will catch your eye. If you ever make homemade vinaigrette or like to finish dishes with olive oil, take the time to taste all of theirs. The lemon one is so good and makes a great light dressing. But for real, the Peruvian Chicken Spice Mix is out of this world. I need to go back there myself.

You are plenty good to go. Enjoy.
