How long is too long for chicken stock in an instapot?

Doing a simple stock for gumbo later. I’m having to leave in two hours for an hour-long meeting. My wife is here but doesn’t want to deal with the stock.
I’ve set the stock for 150 minutes. Between the time it takes to come to pressure, cook for 150 minutes, and do a slow pressure release, I’m thinking that’s plenty of time for me to leave and get back to finish it.
I’ve read that stock can be overcooked and become bitter but can’t find any info on how long that is in the instapot.

I.ve made a lot of stocks and never heard about or experienced this.

I dont think this is a thing.
Unless you let the stock reduce down to where there is zero liquid left and you burn the solids leftover from the stock.

Just set it and let it go to the warm cycle when it's done.
I do a turkey stock every thanksgiving with as many turkey carcasses as I can accumulate. I cook that stock down to the point that most folks would question what it is. Makes an incredibly rich gumbo.
