How long is a jar of roux good for?

I have 4 half jars in my fridge and no clue when I purchased them. No date on them as far as I can tell.

Should be oil, flour and a preservative or two. If no visible mold, you got the green light.

The pre-made roux is better than you think. Not my go to for at home cooking but it's used a lot in professional kitchens. Does the job.

I could make a gumbo with jarred roux and one with homemade and you would not be able to tell the difference. And aren't you from Ohio?
