Can you use Tender Quick instead of the Prague Powder? I already have the TQ in the pantry.

I don't know anything about tender quick but from my understanding, it is not the same as Prague powder. You'd have to google it to be sure.
Prague powder is a little sodium nitrite with a lot of salt. Sodium nitrite cures the meat. They mix it with salt as a carrier because it's easier to measure. They dye it pink so it doesn't get confused with regular salt.
