I want to thank you for making this thread.
I made a Sunday gravy last Sunday and it came out awesome.
I used Michael Corleone's process for the most part but only what I already had on hand in refrigerator and kitchen.
-tomato paste
-can of stewed tomatos
-boneless pork loin which I cut half of into chops
-top sirloin roast
(I bought the meat Saturday as both were on sale at Rouses not sure which way I was going for Sunday meal before reading this thread)
I did add some bell pepper which his didn't call for. Is that more of a creole or Louisiana thing?
In any case the family loved it. On Tuesday I did buy some fresh sausage and ground meat for meat balls which I added which helped with the meatiness but the flavor was really good with out the added meat too.
