I pre-acidify wort when I'm kettle souring with grain. Like the wiki entry mentions; dropping the wort to below 4.5 significantly reduces the chances of picking up some pretty nasty bacteria. If I'm using a pure lacto / bacteria culture from one of the yeast companies skip this step.

I would use a pH meter and probably start with 5ml (1 tsp). I think LA Hombrew sells the syringes they use for the hop extract pretty cheap. I use those to measure the Phosphoric acid.

I acidified with lactic acid usually; sometimes I won't bother if the wort had a mash out step and I feel confident it was above 160.
I don't boil at all; just rack to a carboy and pitch a big starter of yeast. If it smelled off I'd pour it but I've never gotten anything but clean sour wort and yogurt smell.
I also sour in a keg after purging with co2 and filling with 5-10psi though. Not as much worry about bad bugs because there's no O2.

BTW after I called to confirm order from LAHomebrew, he emailed me telling me my order was ready, and that it was refreshing talking to someone who has done their research before starting, so thanks for the help guys! That online book has been really informative as well.

Good luck! I think you'll really enjoy it. It seems a bit overwhelming at first, but once you get your first brew out the way, you'll realize just how simple brewing is.

I'm looking forward to it. Seems like fun. I got the citra IPA bc yall said it was like autotune for hops

I cleaned and sanitized my kegs and dip tube veryyyy thoroughly. I have not cleaned my faucets. I did use the same faucet water to clean my fermenter prior to pitching yeast so didn't think it would be that but who knows. Its either faucet or tank.

The beer tastes good until the keg becomes completey equalized and sits on the co2 for a couple of days

Pour a pint, taste it, then let it sit 5 mins and taste again. If it tastes normal after co2 leaves it then you just have a carbonic acid bite and can fix it by bleeding some co2 from the tank and lowering the regulator.
If not, then you can try sampling the beer without your kegerator liquid lines: either get a picnic tap to pour or else take the keg off co2, bleed all the gas with pressure relief valve, open the top, and grab a sample with a sanitized wine thief or turkey Baster. If the beer is bad from the keg too then the fault is either the kegs or the co2. If it's good then the issue is your liquid lines or taps.

I meant your tap faucet, assuming your using perlick or other stainless taps.

I've replaced a lot of the poppits on my kegs with universal poppits. You can find them pretty cheap online, buy a handful and keep them on hand and it will be worth every penny.

I'll second LA Fire Extinguisher.
My first guess would be carbonic acid, but it's typically described as astringent or metallic.
'Medicinal' is normally chlorine related (water or sanitizer) and that would be in both bottled and keg.
Is this a new regulator and gas tubing or have you back fed beer into the lines in the past? Infections from the gas side are rare, but they can definitely happen.

I'm definitely suspect of the backfeed. I use my regulators check valve often but I may have slipped and forgot. Ill be tinkering with all the advice you guys are giving me. Thank you for all the help.

Actually I just have my kegs in a fridge with a picnic line. The tap faucets will be my next venture.

The regulator is 2 batches old and the lines are brand new. The water I used for the brew was bottled spring water by the gallon.

Also the keg I used was new refurbed. New poppets and in and out connections. It's the first brew in it.

Well, my co2 tank is almost empty, so I brought it to l Homebrew and it needs to be hydro tested before they can fill it. Anyone know what time la fire extinguisher closes tomorrow?
