Not necessarily. Last weekend I cooked 50 lbs of rice then cleaned the pot and cooked 25 lbs. The 50 lb pot took at least an hour longer, but we did have a problem with the gas bottle freezing up. That only added about 10 minutes to the cook time.

Same here.
Unless you're cooking for more than 10, it shouldn't take any longer than 2-2.5 hours start to finish

This is called "white" jambalaya. (Made by those who can't cook at all) As opposed to "red" by those that bastardize the process. As opposed to "brown" by those who know what the hell they are doing.
