I'm not going to disagree there, except we always used pigs feet, not the skin. But it was still gelatinous. But isn't that like saying you won't buy peanut oil, when you can just extract the oil from the peanuts yourself?

Look, I love HHC. I'll eat the kind with lots of gelatin. It's what I grew up eating (whether it be from the skin or feet, or from the skin and feet bought from the store). And I'm not knocking the HHC in the OP. But for me, when it is "shiny", it's going to have the texture I'm not thrilled with. I prefer a texture that is much less firm. I didn't even know it existed like that up until about 10 years ago when I had Jerry Lee's for the first time. The flavor doesn't really change. But the texture is where it's at.

I haven't decided yet. I like stopping in Port Barre and going to Bourque's for boudin and stuff like their Jalapeno Sausage & Cheese Bread. Could be a last minute decision.

I guess my question is where are you coming from. Lol. Will you be traveling up 190 west to I-49? I don't know what part of the state you hail from. If so, Soprano's supermarket on 190 in livonia has some legit HHC. Could use a touch more salt, imo, but the difference in texture centers around what some of this discussion has been. Would be curious your take on it. I've had their boudin multiple times on the grill, and it's always been pretty good....but I think I've been 5-6 drinks in pretty much every time.

Coming from Metairie.
I know I stopped in a place called Guillory's a while back I believe it was in Pineville. They sell a really good jalapeno and cheese sausage.

Not sure exactly if it's tomorrow(Friday)or Saturday I'm going but probably going I-10 to 190 then I-49 to Pineville. Might stop at Kartchner's, Soprano's and Bourque's on the way. Any other good spots for boudin, HHC or other goodies?

Quebedeaux's in alexandria has good boudin and boudin balls. Lunch specials are pretty good as well
