Here's my rib rub.

If it sounds good, give it a try. I really like it. I prefer savory, not sweet. I serve a homemeade sauce on the side.


2 tbsp garlic powder

2 tbsp onion powder

2 tbsp black pepper

1 tbsp salt

1 tbsp oregano

1 tbsp mexican oregano

1 tbsp ancho chili powder

1 tbsp chipotle chili powder

I'm about to pull some ribs off the smoker that I used Dominator on!



Op's rub looks good! I'd like to start mixing my own to keep on hand.

Here is mine, just another option thrown out there:

BBQ Rub (sweet for chicken or pork)

2 Tablespoons Smoked Paprika
1 teaspoon Onion Powder
1 teaspoon Garlic Powder
2 Tablespoons Brown Sugar
1/2 teaspoon salt
2 teaspoons Chili Powder
1/2 teaspoon Ground Mustard
1/4 teaspoon Black Pepper
1/8 teaspoon Cayenne Pepper

I have 2 slabs resting right now I like Dominator,but is possibly to sweet for some people.

My go-to rub

4 teaspoons paprika
2 teaspoons salt
2 teaspoons onion powder
2 teaspoons fresh ground black pepper
1 teaspoon cayenne pepper

I usually double or triple the amount depending on how much I need. Very simple and excellent IMO

My number 3 rib rub...

#3 Rib Rub

1c Smoked Paprika

3c Chili Powder

2c Paprika

1/3c Garlic

3c Brown Sugar

3c Sugar

2c Diamond Crystal Kosher Salt

1T Ground Cumin Powder

1/2T Ground Cayenne Pepper

1T Black Pepper

2t Five Spice Seasoning

1T Smoked Tomato Powder

It looks like a lot of sugar bit it's really well balanced...

Mine starts with a rendezvous mimic recipe I found, then I add brown sugar, salt, and cayenne to taste:

8 tablespoons American paprika

4 tablespoons powdered garlic

4 tablespoons mild chili powder

3 tablespoons ground black pepper

4 teaspoons whole yellow mustard seed (ETA: I leave 2 tsp whole and grind 2 into a powder)

1 tablespoon crushed celery seed

1 tablespoon whole celery seed

1 tablespoon dried crushed oregano

1 tablespoon dried crushed thyme

1 tablespoon whole allspice seeds

1 teaspoon ground allspice

1 tablespoon whole coriander seed

1 teaspoon ground coriander

1 teaspoon Accent (MSG)

+ Brown Sugar to taste
+ Kosher Salt to taste
+ Cayenne to taste (go easy!)

This recipe makes enough to coat two racks of ribs and one fill one mason jar.

I picked this up from friends of mine on Cigar Weekly who are longtime members of The Smoke Ring. This was first posted in 2007, and I didn't even try it until a couple years ago. It's really a great compliment to the pork.

Dried apple is not available in a lot of places so you can make your own by doing this. Take 3 apples, slices them VERY thin. Spray or butter a cooking sheet. Place the thin apple slices on the tray and salt the apples slices, add brown sugar to the apple slices. To dry them ourt put them in the oven at 150 degrees for 2-3 hours. They will not become completely dried out and crunchy in the oven, after it appears they are drying you can take them out and let them rest. I usually let them sit over night and they are very crunchy in the morning ready to grind up. _________________


When I tried it a couple years ago, I found apple chips that were dry enough to grind in the food processor. Got them at Rouse's but in the specialty/diet food aisle.
