If you are worried about it sticking just put a pan on the grill and cook in it. I put cast iron skillets on mine all the time and it gets the flavor you are looking for.

And that way you can use any fish you want and they ALL go well on fish tacos.

You can use a cedar plank to grill the fish as well.

Do you have a charcoal starter? If so throw about 10 coals in it, light it and use that ti grill it. Ive done that with Tuna Steaks
