Gumbo for 50 people

I was volunteered to cook gumbo for a work function next week and I have to cook for 50. The biggest I’ve cooked for was 20 people. I was thinking 20 lb of chicken and 10 lb of sausage, fresh and smoked. What are some of your recommendations? Too much meat, not enough?

I'd goto T-Raks and get some premade gumbo and be done with it.

I drive by T-Racks everyday and I’ve yet to go in yet. I’ve heard good stuff about it

yea the more sausage the better. hello i would go more sausage then chicken because, F the chicken. I only eat the chicken when i ate all the sausage.

That should be plenty of meat. I prefer a more 1:1 ratio of chicken-to-sausage.

Unless you're using jar roux, make your roux at home. It'll save you some time on site, but more importantly, you'll avoid any mishaps making it on site.
I'd go 15 lbs chicken and 15 lbs sausage. More smoked sausage than fresh. I prefer all smoked sausage.
