You know, it must be impossible for a Spanish person to order seltzer and not get salsa. "I wanted seltzer, not salsa!"

No, it´s not. The main point is/was, ´mole´ is the Mexican word for the Spanish word ´salsa´, hence guacamole. I never thought about it, until having this ´eureka´ moment.
