Grillo's Pickle de Gallo

Grillo's Pickle de Gallo is a condiment that's piqued my interest since I first saw it in Publix. For those of you not familiar Pickle de Gallo, it's a re-imagining of the traditional Pico de Gallo using pickles instead of tomatoes as the base. A Salsa and dill relish hybrid with a thicker cut of a traditional pico de gallo if you will. I've bought it a couple of times searching for a good use for it and have mainly used it in wraps. It's decent with hotdogs or on hamburgers. It's a product I love the thought of but the pickle component just doesn't have the acidic pickle bite I want. If anything I always wished it was a little more pickle forward and the hot is disappointingly not hot.
As much as I wanted to love it I just never found a great use for it. But at lunch today I finally found the magic pairing. Pulled pork with my all time favorite off the shelf mustard and vinegar based BBQ sauce Foy's Old Fashioned Hot BBQ sauce with a giant generous helping of Pickle de Gallo.
If you are like me and enjoy the extra bit of pop that the vinegar in slaw or pickles pulled pork sandwich you might love Pickle de Gallo with your next BBQ. Where slaw can be a bit too sweet and a dill pickle can be a bit too bright and acidic with used with a mustard based sauce the Pickle de Gallo strikes a perfect balance and makes an amazing compliment to a good BBQ sandwich using a mustard vinegar sauce. I need to test it with a more traditional sweeter BBQ sauce to see how it works in that scenario. Will it have enough acidity to balance a sweet sauce? That I'm not sure of.

I've never had the Pickle de Gallo but the Grillo's dill pickle chips you get at Costco are awesome.
