That's an Indiana staple as well.
I have my mothers old electric deli slicer (that she bought many years ago and used once) and I'll cook one then refrigerate. Then slice it paper thin and reheat on a flattop or skillet with bbq sauce. Kind of like the bbq pork sandwich at Hi Ho in Hammond.
They make great sandwiches and sliced thin you get a mountain of meat.
You can also just slice thick porkchops and cook like that.

Yea sometimes I do, I still enjoy it even cooked like she wants it except for steaks. Those of course I can throw mine on grill well after I do hers. We have 4 kids so something like a pork loin it's just easier to cook in one big piece

The sauce is awesome, just add the ketchup last and in small quantities because it can quickly over power it.
