Orleans Coffee is a custom roaster in NOLA, been around for years. If you wanted a custom house blend, Orleans can help you create it and then roast it to order as needed. LINK
ETA: pay attention to your on-counter merchandising; people buy a surprising amount of impulse stuff along with the coffee. Holiday tchochkes, mugs, mints, chocolates, etc. If the products are interesting, offbeat, cool, you'll see some nice add-on sales.

In fairness, two well-established local brands sort of skew this market (speaking of Community and PJ's).

In a sense, they do give the area a strong local flavor, just one that locals might find to be like a national chain. But they are local places that are hard for other locals to compete with.

I'm not sure if Nashville has anything comparable to those two.

One thing is know your neighborhood. Highland Coffee knows the pedestrian traffic it will get from LSU. The little place on Perkins near Varsity Sports (name's slipping my mind) has the right demographic in the neighborhood, as does Brew Ha Ha.

Hebert's was not a good fit in the "in-city burb" where it was located. For it to work there, you need to have the model of a drivethru catering to a commuter culture.

we are out in Bellevue close to the Natchez Trace. There are 2 Starbucks within a 5 mile radius and that's it

Uhh... are you sure you are in Nashville, Tennessee? I could rattle off 10 or so local coffee shops just off of the top of my head.

Ah gotya. That's getting on out there, isn't it? I love Percy Warner park and visiting the Loveless Cafe. I'm surprised there isn't a local place that way though. Does Belle Meade have a place?
