Making my gumbo for T-Day today and will put together other things over the next 2 days so all I have to do on Thursday is fry turkeys, make rice and mashed potatoes and pull stuff out the oven after heating up.

Menu is:

Fried Turkey
Chicken/Sausage gumbo with rice
Giblet Gravy
Baked Mac & Cheese
Eggplant/Shrimp/Cheese Casserole
Mashed Potatoes
Cornbread Dressing

There will also be a few pies, beer, wine, spirits, set-ups and water and coffee for the less inclined.

Cut back on the number of people this year by half after not having the party last fall due to Covid. Should only have between 12-15 showing up this time around.

Last year with just the wife and I was real relaxing and I got all the cooking done in one day as opposed to spending the better part of 3 days with a big party on tap.
