When I was a kid, garfish balls with rice and gravy were a Lenten staple in the school cafeteria and in plate lunches. Is there anywhere around Baton Rouge that sells garfish balls in a plate lunch?

There's a little grocery store in Morganza that sells raw garfish balls. I tried cooking them once, but my gravy was a mess. Does anyone have a good recipe? I tried looking online but nothing seems right. (I remember a light brown gravy, the recipes I've found call for tomato sauce in the gravy.)

TIA
