The advantage of peanut oil is the high smoke point. It will burn less easily than other oils.

The disadvantage of peanut oil is that it is often much more expensive than other oils.

I don't use peanut oil. I stay attentive to the temperature and have never burned the oil.

If I were cooking several turkeys and other items.... then peanut oil might be the way to go. I can't justify the expense for just the one turkey.

Lard works great and will give you the best flavor by far IF your only frying one Turkey. But you have to be very careful about overheating it. It breaks down fast.

Peanut oil is more forgiving and will last alot longer - 3-4 turkeys
