It's not a matter of snobbery, Chinese "crawfish" have a very different taste and texture, about the difference between hamburger and prime steak. Even Louisiana first rate frozen tails are not as good as the one you peel yourself. If I'm cooking for a crowd, I use the frozen, but for just my wife and I I'll sit down and peel some.

But, I understand you can only buy what is available to you, so close your eyes and think of Breaux Bridge.
