Used to talk to a friend of mine about fried catfish and greens...he never commented much. One day I ask him what he ate with fried catfish...he said spaghetti!! What?? His comment was, well you eat Ketchup with fish?...well actually I don't but I see your point...both kinda tomato based. One Saturday night I tried it....wasn't bad. Certainly not in my usual rotation for fried catfish.

White beans, shrimp, with thin fried catfish is good eats!!

Grandma would make Oyster Spaghetti that was fantastic.

Same grandma would always serve pork chops with her white beans.

Make a small blond roux with butter, add the trinity (finely chopped) and cook down. Add garlic, chopped fine. Deglaze the pan with a splash of white wine or chicken stock. Add half n half, simmer gently until it thickens a little, then add oysters and oyster liquor (the juices from opened oysters) and cook until the oysters curl a bit.. Add parsley and green onions to taste. Salt, pepper, etc. A drop of crab boil if you want so,e heat and flavor, but it’s usually not a super spicy dish.

Some folks stretch the oysters by using sliced mushrooms or chunks of potato.

I’ve put a fine, traditional oyster stew in the Recipe Book. Very similar to the style HO posted.

My grandmother would add chopped up boiled eggs to this stew. It would give it a weird color but it tasted incredible with some french bread.
