I don't use skin either. I've heard some folks here say they use the skin and they put the whole chicken pieces in. I don't care for soggy skin floating in my gumbo or whole pieces of chicken that I have to fish out of my bowl. That's my own preference.

I assume you could fry the skin and simmer it in your stock, removing it before adding the roux, but I don't think it's necessary.

If you fry chicken at home, you could just save up your fried chicken oil with the sediment and use it to make roux the next time you make gumbo. You could skip frying the chicken, I suppose and still get some of the flavor from fried chicken roux.
