Foodsaver issues

I just purchased a Foodsaver 5380 model and it works great for me intermittently. I place my bags in the slot and sometimes it works flawlessly and others it leaves air in after the seal.
How deep do I put it into the view window?

A few inches and make sure it’s dry. A wet seal is what’s causing your issue

dry your proteins with paper towels or leave uncovered in the fridge for a few hours

Fold over the bags about two inches before you load them. As someone else said, you are probably getting liquid/fats on the last few inches of the bag and this is contaminating the seal.
