Make sure you have a quick read thermometer handy and use it. Even better get a Timer/thermometer with a probe on a wire so you don't have to keep opening the door.
Be aware that the temperature will continue to rise in the bird even after you pull it from the oven.
Don't cook a turkey more than about 15-16 pounds on your first try. The big birds are very difficult to get to cook evenly.
