However, i've had so many Cuban Abuella's Mojo on Cuban pork that the idea of a "finishing sauce" isn't something I'm opposed to.

Lechon Asado. Delicious Cuban dish.

I do...well, I used to. I still have the recipe obviously but I've learned that more and more comp cooks use a commercial sauce to their liking and some doctor it to their tastes. So I started looking around and trying different ones and adding different things...then I found and tried Big Mikes Sweet Heat Bbq sauce. For my taste, it needs nothing. It's nice and thin, not overly sweet like some of the other crap out there (I'm looking at you, Sweet Baby Ray) and the "heat" part of it is barely noticeable.

Rouse's carries it and I highly recommend it.

On at 12:30 am. Neededing for 6pm. Posted finisheing sauce ready to go. One in the right is dusted with Cajun cocaine and the one I'll try the FS on. One in the left has about a dozen pods of garlic in it and dusted with hard core carnivore red.

Dang wind gave me some issues. Sitting at about 250 now. I tried a little water in the pans at first to try to help the drippings not burn some. Does it matter if it gets a burnt layer on the pan and drippings on top of that. Still good to use in the BBQ sauce?
