I'm doing St. Louis ribs today. Smoking at 225. I'm not gonna wrap, so I am thinking it will be about a 7 hour smoke.
Have you figured out a way to smoke meats without drinking beer? If you have, please don't tell me about it.

Oh I am getting a beer. Last round I did at 250 and I had a awful stall on the chuck. Going to put them on at 270 this morning. Ribs, 3-1-1.

I often go in for a couple of hours on the weekend to catch up on things, but a good client needed something important done ASAP so I got it done. No work today--just beer.
