I discovered this cooking method over 30 years ago. It was a Frank Davis recipe that I picked up at National/Canal Villere. It was a two or three page pamphlet and I can't seem to find it now. Probably in a cookbook as a bookmark. Lol.....
Below is a link to it or what was very close to it. I will say that I used a goodly amount of black pepper and this recipe produced a fantastic aroma throughout the whole house. The skin comes out perfectly crisp and goes quickly if I can get it to the table.
One year my daughter that had moved out slept over mainly to enjoy the smells from roasting the turkey this way.

I've never had one dry out. The sealing in the initial roasting prevents that.

I've done ours this way the last couple years. Smoke at 225ish for an hour then into the oil to finish it off. Has come out quite nice. Only snag I've hit is the skin splitting when dropping in the oil but that certainly didn't ruin anything.
