F&D Board’s Thoughts On The Umai Dry Aging Bags?

Have a decent Choice rib roast from Costco and thinking of throwing it in a bag for a couple of weeks before smoking and searing.

They work well. From reading on the fry aged group on FB it seems the bags might take longer than the open air fridge type to get the flavor of a dry aged steak.

You will have some loos that you have to trim off. Grind into burger meat, make tallow, or stock.

They will cook faster because less water content as well.
