So....
The wife will be in Atlanta all this week. This means that I get a chance to cook for myself and try things that she would never eat. She's not as much of an adventure eater like I am.
Anyway, I have a bunch of jalapenos that I had planned to grill this week and was thinking about adding some chicken liver to it. My typical procedure is to half a jalapeno, fill with cream cheese, stuff with a Lil Smokey sausage, then wrap it with a half slice of bacon. Throw that on the smoker for about an hour or so. In this case, I was considering replacing the Lil Smokey with chicken liver.
Thoughts? Do I do anything to the liver prior like marinade or soak in milk or slated water prior?

Make pâté with the chicken livers, fill the jalapeno with the pâté, add some water chestnuts on top then wrap in bacon.

I don't know if I would recommend marinating or maybe just a quick dunk before cooking, but I would try soaking those disgusting chicken livers in gasoline and cooking them down into smoldering ashes in some sort of fire pit.
