Eggs in Purgatory

Had never heard of this until somebody was eating it on Billions last week. It looked interesting so I made it this AM.

I made a half batch. Double everything and use a bigger skillet for full batch.

1. Half onion diced in skillet with some olive oil. Sauté until tender, maybe 5 min.
2. Add half a 15 oz can of diced tomatoes, drained. Also add some minced garlic, salt, pepper, parsley, oregano, red pepper flakes and a bit of hot sauce of your choice. Sauté for 5 min or so stirring occasionally until thickenened.
3. Make indentation in middle and add 2 eggs. Cover and simmer on low heat for a couple minutes until whites are set. Remove cover and let simmer another minute or so to thicken.
4. Remove from heat. Add a bit more pepper, green onion and parsley with a bit of parmesan as well.

I ate it straight out of skillet.

Finished product(it looks like there is cheese on there but that is just egg white):

I love it... usually add a little habanero to really spice it up to "purgatory" level

Never heard of that, IWEI. Looks a lot like a shakshuka, which I've been wanting to try

Sounds basically the same except with a different spice palate

Yeah, looks similar. The curry and cumin would give it a slightly different vibe.

This is a standard weeknight dish at my house, whether as eggs in purgatory (leftover pasta sauce is usually the base), shakshuka (I make big batches and freeze in 2-cup portions), or a kind of heuvos rancheros variation (use jarred red or green salsa and slide out of the skillet onto a toasted tortilla, with or without beans). Yesterday AM, I cooked a couple hands full of baby spinach in half and half, plus a little nutmeg, black pepper, and grated Parmesan, cracked in the eggs, and popped on a lid.

It’s a great, straightforward formula: something tasty and slightly liquid, plus a few eggs, cooked in a skillet with a lid. A steam-poached thing, great eaten w/bread and a fork, or no bread and a spoon to get all the runny goodness.
