this is one of my favorite dishes...gonna try and cook it for my family tomorrow night. any good recipes?

If you know how to make hollandaise sauce you're good.
If you don't, it ain't that hard. Make sure to clarify the butter and don't get the bowl too hot when fluffing up the yolks (double boiler or bowl over simmering pot). Give it a dash of hot sauce and some fresh lemon juice, and don't let it sit too long after preparing.
My personal preference - make over-easy eggs versus poaching them. Much less hassle for a similar result. Get good ham - it makes a big difference.

Went to a place that used biscuits instead of an english muffin, and it was really good.

I made some for breakfast the other day, I would post the pic, but I was very liberal with the Hollandaise, and it doesn't look appealing.
I always make a mixture of Eggs Sardou and Benedict.
The Sardou being I top my toast with Bacon (not Canadian) or Ham, then sauteed spinach, and artichoke then poached eggs, then the sauce.
I was also out of Tarragon the last time I made it so I used Dill, and I liked the taste.

Its also really good if you throw a avocado slice on there.

Saw this on their YouTube channel, quick easy hollandaise sauce from Ruffinos. Almost like cheating, butWorked like a charm! Hollandaise
