I used 1.25 quarts per 1lb of pasta per the calculator. Results was amazing flavor with al dente when first served but a tad dry for the later servings.

I probably should have gone to 1.5+ quarts per 1lb. The pastalaya is still in the pot. Is there a way to salvage the leftovers with more water?

Yes, add more stock and warming up, that is what makes pastalaya so easy it is forgiving
