I'm over the put bacon in everything craze.
Had bacon today and I love it. I don't need it in everything though.

the bacon grease is only there to add salt
and yes, adding salt to your cookies will make them better

I've had bacon chocolate chip cookies.

experienced a cookie first this week.
Someone brought in a chocolate chip cookie and brown gumbo roux flour was used and it had pieces of bacon as well.
it was edible, but MEH...

It makes a minimal impact...if you want a smoky cookie, sprinkle the tops w/smoked salt.
Not-so-secret to best-ever chocolate chip cookies: rest the dough overnight in the fridge. Makes a tremendous difference in texture. Try it out......and while you're at it, upgrade the chocolate chips to something better than Hershey's or Tollhouse. (Callebaut or Valrhona, or Amadei if you're feeling spendy)
