For me, it depends on the nut. Raw peanuts taste like crap to me, so I will more often boil them in heavily seasoned water using seafood seasoning, then after they are cooked and drained, I'll roast them in the oven to dry them out and roast them a bit.

Now, pecans, walnuts, chestnuts, etc. I prefer to eat them right out the shell in their natural state.
