Do you have any sushi chefs that you rec for sushi places in NOLA/Metairie?

I have been to most of teh places, but rarely sit at teh bar. I'd like to go to one of the sushi places and just sit at the bar and tell the sushi chef to prepare me something, whatever he wants.
Anyone do this, fairly regularly and have a chef they use often and like?

have a friend who swears by shogun. go to the chef say Omakase and it will be amazing. havent tried yet
