Do I Need Reservations for 1 Person in New Orleans - Feb 17-20

I attend an annual convention during the weekdays leading up to the big Endymion/Bacchus Mardi Gras weekend. My wife usually joins me and we squeeze in some nice dinners while we're there. She's not able to join me this year due to not having enough vacation days.
I still don't want to miss out on some of the nice meals I usually enjoy when I'm down there so I'll probably just go dine by myself most nights. Places we usually like are:
La Petite Grocery
Herbsaint
Saba
Shaya
Bayona
Compere Lapin
Peche
Gianna
Do I need to bother with trying to make reservations for 1 person or should I be good just walking up and eating at the bar at most of these places during that time of year?

Definitely dependent on the night of the week, but sitting at the bar on all but Herbsaint should be easily doable.
Id sub shaya or saba since they are the same restaurant.
Call a few minutes ahead and have a backup option. If during the week I don't see any of those being particularly bad unless the convention you are at floods downtown.

Yeah, definitely like both but will choose one or the other if I decide to go that route.
