Man, that sounds great. I'll have to put that place on my to-do list. I don't know of any place in Louisiana that splits the long bones for a marrow dish. I've had it like that in NYC an Paris, but not in LA.

Also Coolpapaboze, I also had the bone marrow octopus fusilli at Marea (I think from one of your prior recs) and it was fantastic. I've had the long split bone roasted marrow app at Minetta Tavern and it was legit, but not at the Marea level.

You eat marrow all the time and it's what makes it tasty. You just don't realize it.

I enjoy the meat more than the marrow in osso bucco

Dante's Kitchen has an escargot app with bone barrow that is really good.

I had a dish at Per Se that was marrow injected lamb that was probably the best piece of meat I've ever had in my life.
