I went when it first opened and was very turned off by the owner. We were honest with him about the meal being subpar and he argued with us.

He contacted me later and claimed he would be making changes and updating the menu, but I was really put off by him. I love the space and would love to see it work, but there are too many other places I'd rather spend my money.

As far as the Open Table reviews, he pushes those very hard. He kept telling me how those are the only "real reviews". I wonder if an owner can have negative OT reviews removed since they pay OT per reservation.

I'm pretty sure the owner or someone else affiliated with the restaurant writes positive reviews. Check out the bottom of this thread

I can definitely see in the "Exhibit C" in your post with the copied review of Dijon and Root. He boasts about Root being over ambitious. Clearly nothing on the menu at Dijon then, and now is ambitious. Go get a real fricking chef and that restaurant will work. Make the same boring arse food and it will shut down again.
