Did some dirty rice and petit pois today

Cooked down a beef/pork mixture along with the trinity



Added the ground liver and gizzards and then some chicken broth. I cook the rice with it rather than mix already cooked rice





The petit pois was just a roux with onions and tasso and canned peas. I usually cook dirty rice in a black iron pot but didn’t have one available today.

I love petits pois in a roux, or baby green limas done the same way. But your pics make it seem like you're cooking in the bottom of a 55-gallon drum....exactly how big was it? LOL. Next time you cook 'em, try dropping a few dried shrimp into the pot for a great savory seafood back note.

I thought it looked like a concrete culvert. LOL. Camera angle does weird things.

Food looks fantastic.

I was at work today and had to use what was available lol. It was tall like a turkey frying pot
