Man, that cornbread looks just like the one I make. Once I get my batter made I will heat up my cast iron skillet and put about 1/4 cup of bacon grease in it and make sure to spread it around to cover the entire inside of the pan.
I will let it heat to the point it's almost smoking and then dump the batter into the skillet and listen to it sizzle a bit before putting it in the oven to finish cooking.
It comes out the skillet clean and had a crispy outer crust that has a great texture.

I never knew my grandpa on my mom's side since he had died before I was born. My grandpa on my dad's side died when I was just a little kid around 5 or so. I do remember him mostly for his small butcher shop he had on Aycock St. in Arabi near the river. I never knew, or just can't remember him ever cooking.
Now, my grandma on my mom's side was a 100% Coonass that could cook up a storm and I can never remember eating anything that old lady cooked I didn't like.
My grandma on my dad's side was nothing short of a hypochondriac who hardly ever got out of bed and had a nightstand that looked like a CVS pharmacy with all the bottles of pills on it. I never saw that woman even get her own food, much less cook some.

Pawpaw used to cook a pork roast stuffed with Cajun sausage. It was always a treat. The man loved eating well with friends and family.
Off OP topic, but I would love a pan of my Mawmaw’s cracker pudding. There is no comparable dessert I’ve ever had, and I have not been able to recreate with the same quality.

When he was alive he was a great cook. Supposedly as a teen he had a brief job cooking at a cafe, then cooked a bit in the Navy when their unit cook had something happen.
He could make the best fried okra you've ever had.
