It’s going to sound silly but get your water hotter. Like nearly boiling, typical water heaters have scalding protections so 120 degrees is about their limit. Getting it closer to 212 with the dawn you’re already using will pull that grease off.

So this thread inspired me to clean my hood grates and interior. I took the top rack out of my (kickass) Bosch dishwasher, loaded all of them on the bottom, and ran it on the longest cycle with the “sanitize” setting. All came out squeaky clean. The rear drip rail requires hand-washing, but it’s easy enough to wash by hand (I have an oversized laundry sink). Also took apart my BlueStar and cleaned it—there was some scary stuff hiding beneath, LOL. All so squeaky now, I barely want to use it.

GOK or Dynafoam. If you can be in the Houma area I can help you out. Another option is to toss them in a boil out like you do for fryers. I use a product called Grill Brite. Fill the fryer with water, a small amount of Grill Brite, and toss them in. I toss hood vents and pots in there all the time to get grease and soot off. Works like a charm.

A long time ago, when I was a teenager working at a burger joint, we boiled the vents in hat water and vinegar for a few hours, twice a month. Are they too big for a crawfish pot type set up? The grease would eventually break loose and float to the top.
