Crowdsourcing tasso ideas

I recently came into some really good tasso and looking for ideas of what to do with it. While good, im tired of throwing it in a jambalaya or red beans. I know you fine baws have the answer im looking for.

I smothered a large pit of cabbage with pieces of tasso from Wayne Jacob's smokehouse. I recommend.

Tasso sweet potato soup or bisque. Houmas house does the soup and it is fantastic.

I use it anywhere/anytime a seasoning meat is called for. Peas, beans, greens, etc, etc, etc. Also tasso gravy over grits is good stuff.
