Creole Tomato Jam Recipe for All of Those Tomatoes

Creole Tomato Jam
Makes 1 pint

Ingredients

1 garlic bulb, peeled and sliced
1 sweet onion, julienned
½ tsp. vegetable oil
3 large Creole tomatoes, peeled, cored, and rough-chopped
2½ tsp. kosher salt
½ tsp. black pepper
½ tsp. cayenne pepper
1 cup dark brown sugar
2 tsp. Crystal hot sauce
2 tsp. Worcestershire sauce
Juice of 1 lemon

Preparation

Add garlic and onion to a large pot with oil and sauté over medium heat until garlic is golden brown. Add remaining ingredients and stir to combine. Reduce heat to low and allow mixture to simmer uncovered for 2-3 hours, or until jam is dark and thick, stirring occasionally. Pour the jam into sterilized jars. Refrigerate for up to 2 weeks.

Chicken, pork, bruschetta, biscuits, grilled cheese, cream cheese...whatever you like.

Looks good, Gris. I have a bounty of tomatoes right now....time to try it on some polenta cakes.

Dang that looks good. I can't get Creole tomatoes here in Los Angeles, but we do grow heirloom tomatoes in our garden. I'm going to have to give that recipe a try.

I think it will be fine with any homegrown or fresh tomatoes. Heirlooms would be great, in my opinion.

I got some seeds that I started up here in Sonoma County. Everything was great until I went out of town during a heat spell and they all died. Still got some creole seeds for next year though.

I've always thought the creole tomato taste came from the soil. I've got some creole tomatoes and they're good, but I've yet to have one that tastes the way they did pre-katrina. I've had a lot of them, but so far, nothing like the original creole tomato taste I remember. I had a ton of them from St Bernard that summer and oh were they the best ever.

When I was growing up in New Orleans one of my dad's best friends was a farmer in St. Bernard Parish. That guy kept us stocked with Creole tomatoes from his farm. To this day still the best tomatoes I've ever had.
