I attempted this recipe yesterday and it turned out pretty decent. However, it wasn't as pumpkin flavored as I thought it would be. Recipe called for pumpkin puree (1 15oz can).
My question to you guys: Should I have used pumpkin pie filling for more pumpkin flavor? I followed the recipe to the letter, so I don't know what I did wrong. TIA

Irony use pumpkin dry often but I would think that the pie filling would make it too sweet.

Definitely not. Would be like eating pumpkin pie soup with crawfish.
Here is the recipe for a pumpkin soup I made with sausage and it came out great. You could follow this and add crawfish.
