I have cooked 200 lbs before. Used 3 burners and had mild, medium, and hot batches. Add seasoning with each new batch. The hot batch gets a lot of cayenne. If you think you have added enough cayenne, then hit it again. There is always some folks that will never admit it is too hot. They have assholes on fire the next day because I give them what they want. I have never been able to get it hot enough for them without cayenne.

Steam your medium and hot batches in an ice chest with extra seasoning for about 10 minutes. It makes a difference. The food absorbs extra heat.

I used Stale Crackers crawfish boil seasoning last time I boiled. It was spicy, more so than the Zats extra spicy to me. Not so spicy it couldn’t be eaten but definitely a level up from Zats. Good flavor too, one of my best boils of the season.
