They were pretty big at both boils.
They did not have enough flavor and they were not juicy.

For the second batch, he soaked for 45 minutes and the crawfish were MUCH better. Juicy and spicy, without being overdone.

I was under the impression that everyone pre-boils their water. I have a notch I scratched out on the inside of my pot that’s pretty much spot on for one sack.

I fill the pot to that line and add all of my seasoning and then crank the fire up. I rinse my crawfish in the meantime and once I get the water to a boil and my water in the crawfish ice chest is clean then I’ll throw the crawfish, potatoes, mushrooms and garlic into the pot. As soon as I get a boil I’ll let it go for maybe 30 seconds to a minute and then cut fire and add corn and sausage. Then I just let them soak, stir occasionally and test crawfish continuously to see when they’re where I want them at.

Personally I’m more concerned about the texture of the meat and whether the tail comes out of the shell the right way and smoothly as opposed to how much seasoning has penetrated into the crawfish. I’ll take well cooked over well seasoned when it comes down to it.

Yea I've never preheated the pot because it all just kinda flowed together. And I didn't have enough time I guess. I do like the idea though if I'm setup way before people are arriving

My potatoes go in to the pot when I start the fire though

Shouldn't matter with pre-heating. Just throw them in there whenever you want.

Soak until they sink. Sometimes 25 minutes, sometimes 35 minutes.
